Ingredients
1/3 or so pound of Cod, Haddock or similar white fish per person
1 plum tomato or similar
½ onion (as much as you like really)
butter
Salt and pepper
Oregano
Mozzarella cheese shredded
Optional
Lightly cooked spinach or similar
Maybe a little parsley if you like, try things you like
How to do it
With stick butter, coat the baking dish completely yet lightly
Place fish in the dish, cutting it as necessary to cover the whole dish
Put a few pieces of butter on the fish
Salt and pepper fish to taste
Cut tomatoes and onions into small pieces, the cover fish with both
Sprinkle dried oregano over this (oregano makes this dish, but don’t overdo it
Any optional ingredients
Cover generously with shredded mozzarella cheese (always last)
Bake at 350 degrees for 20 -30 minutes max
Then set over to broil and broil long enough to melt the cheese real nice, 2-3 minutes, don’t let it burn though, need to watch it.
